Sorry for the long silence.
The Sake brewery I'll visit is Sawanoi Shuzo / 澤乃井酒造 in Sawai / 沢井 on Chuo line.
It's about 80min from Shinjuku by Chuo line.

The sake brewery tour starts 14:00 and ends 14:50-ish.
So let's meet at entrance of the brewery @ 13:50

I'll be there (Sawai) by around noon as the Sake brewery is surrounded by great nature and would like to enjoy them before the tour.
And also there is sake tasting place there. You can taste some
Sawanoi's at a low price.
