Any suggestion about small villages to visit?

I'll spend the first week working in Sydney (which I already visited and liked a lot) and then I'll visit all around. There are so many things to visit there, so I'd like to know if someone can help me planning the visit or just suggesting me places/cities that would be stupid to miss :) Thanks in advance!
