POLENTA Cheap and esay to prepare veg food

Hi veggie lovers in South America, maybe one day we can meet. For now I wanted to share information about a life saving food for me: POLENTA

I just found about polenta and like it a lot. For me it's a nice easy food, and because it is so neutral you can mix it with a lot of things.
So simple it may be dumb to write about polenta but if you have never heard about it you will be glad to find it, and it can be a nice variation.
It is a corn meal that is made in just one minute of cooking. I turns out to be a goey-mashed potatoes thing that hardens completley when cold.

HOW TO
(instructions in the package)

Boil 3 cups of water with a pinch of salt.
When it is boiling, add 1 cup of polenta and move throughly during a minute.
Turn heat off...

This simple preparation is flexible, I love adding lots of spices while mixing. Once it is cooked I have fried it with carrots, garlic and other veggies. But you basically can make it in any way. (I even believe it could be made a sweet thing, but still haven't used it that way)

You can eat it hot as if it were mashed potatoes, rice or pasta. If you leave it to get completly cold you can even cut some slices and use them as a terrina base or a substitute of bread (with a nice slice of tomatoe and palta... mmm).

Eating it not prepared by you, may not be a good idea as many people use broth to cook it. I love it because it is very very cheap, and so fast to prepare it has become my comfort fast food. 1 cup raw makes like four cups of polenta, for me satisfying as a complete meal.

It is pure corn...hum, I think it is the famous cornmeal.. lol. Well, now you know it's called polenta. JIJIJI
