Well in a way it is good that peru has a lot of backpackers.it is easy to find veg restaurants or at least veg food.i went on a trek in canyon del colca and stayed in houses in the middle on the canyon and they had great veg soups and veg.spagetti for lunch and dinner.hehehe.and pancakes for breakfast. for 8 soles.expensive as it is difficult to grow anything there and nothing is accessible for a distance of 5hrs.
in cusco and arequipa there are some great cheap very cheap veggie options just near the plaza.i like peru for the ample of options and delicious veggie. in the mercado in cusco,near san blas there is a lady selling veg menu. fixed menu for 3.50 soles that is around 1usd 50 cent.

in cusco there are 3 israeli restaurants. they have set menu for 10 soles around 4usd and it includes startes -soups or great great salads and main course -hummus ,falafel or whichever israeli dish you can imagine and dessert can be pancake with chocolate or fruit salad.
these 3 restaurants are just right from the church on plaza de armas. they are aruond this address calle tecsacocha 171.good luck and happy eating.
