Vegetarians in Cambodia and Laos

Hi Guys
We are heading to Cambodia and Laos for a month
Any advises about vegetarian/vegan places to eat
and especially how to deal with people to explain them that we are vegetarians?
What to be avoided
which food is safe?

I would purchase a vegan passport, it has been my saviour whilst traveling.

the only problem for this trip is not enough time as I'm heading there on Wednesday:)

I'm in Siem Reap now and there are at least 4 vegetarian restaurants and many more with vegetarian options

But if Laos is vegetarian heaven I can't wait to be there:)
