Many Indian dishes are vegan by default. However, when you visit a restaurant, make it clear that you don't eat ghee, paneer, curd (yogurt in India), or milk.
Vegetarianism is very common in India. Veganism is picking up only now. Most people can't even pronounce the word 'Vegan.' You would easily find a vegetarian host. If you are still looking for a vegan host, there is a group on facebook - 'Indian Vegan'. Just write a request there.
