I went there around Christmas time some years back with the primary purpose of going white water kayaking. There were some fun rivers in the south central part of the country and if you don't kayak, you can raft them. Also went up north to Arenal volcano, that was scenic and fun. There's a resort built into the side of the volcano with natural-looking geothermal pools and a swim up bar where we were able to watch lava spill from the volcano while having a beer. Manuel Antonio Park on the Pacific side was really nice. Lots of monkeys, good swimming and a fun music/club scene in a nearby town.
