I know nothing about Kos and Symi. In Rhodes you can go south, near Kattavia where there are absolutely empty beaches. Or go at the end of Faliraki beach and Tsambika beach. At Nysiros there is Pahia Ammos and it's fantastic! If you go there you'll definitely like it!
