Brown rice and lentil loaf
can't remember where i found this one, but it's pretty good:
- half a cup of brown rice, or one and a half cooked
- half a cup of lentils, or one and a half cooked
- one large onion
- 2 cloves of garlic
- half a cup of sunflower seeds
- chili powder if you want
cook the rice and lentils, put aside.
saute onion and garlic, add seeds and herbs. put whatever other spices or herbs you want, and as much as you want of course. stir in rice, lentils, mix well, put aside.
in a bowl, combine:
- one tbsp of soy sauce
- 1/4 cup of wheatgerm
- one tsp sugar
- half a tsp of salt
- black pepper
- egg replacer for two eggs
- half a cup of grated soy cheese
stir in rice, lentils and all. transfer to a loaf tin. sprinkle with half a cup of cheese if you want, a little paprika, and bake uncovered for 45 min at 180°C/350°F, till centre feels firm.
leave to stand for 5-10 min before turning out.
i didn't have any soy cheese, so instead i crumbled half a block of tofu and cooked it with the onions and it rocked.
