International Potluck Dinner (in New York)?

I'd like to organize a potluck dinner with each person bringing a home-cooked dish that is representative of their country (or for us Americans, the country our ancestors emigrated from). I'm learning how to cook Vietnamese food but at lot isn't vegetarian so my recipes are less traditional veggie variations. Any fellow cooks interested?
