Mine are not actually vegan cookbooks, but they have soooo many vegan or easily-veganizable recipes: all three of the Moro cookbooks, Moro, Casa Moro, and Moro East (http://www.moro.co.uk/moro/cookbooks/default.asp). I've had the Moro East book the longest, and have therefore cooked the most from it, but the other two are wonderful too.
Some of the recipes I make over and over again are their pumpkin soup, jeweled pumpkin rice, aubergine and tomato pilav, a chickpea, spinach and bread dish, lentil rice, various coca (kind of catalan pizza), courgette with mint and almonds, cracked baby potatoes with coriander and red wine, their amazing vegan paella - the list just goes on and on and on :-)
