I can't think of any specific vegan or vegetarian hostels in Brighton but I'm almost certain all will cater to your needs - being vegan in Brighton is hardly unusual. Most are self catering anyway, so you'll be able to make your own food if you wish.
There are many vegan-friendly B&Bs around (just Google) but they may be a little over budget. Eg:

I'd thoroughly recommend exploring Brighton's numerous cafes and restaurants though. If you're after breakfast, all my favourites are in Kensington Gardens - Iydea, Kensington's and Wai Kika Moo Kau.
Brighton is probably the vegan capital of the UK so I'm sure you won't get too stuck!

Hey Emma, thanks for the reply but I've already e-mailed a lot of hostels and guest houses in Brighton and got rejected by several because they're not vegan friendly or to small.
I've been in Brighton 3 times and I sure agree they have a lot of vegan friendly places but haven't found a vegan friendly place to sleep jet.
