Hitchhiking to China

Hey guys,
me and a friend of mine want to do another large hitchhiking trip next summer. We will start from Germany, through Poland, Ukraine, Russia and Mongolia. We would love to continue into China (maybe by train through the Gobi Desert) but the visa will be a problem, because

- we won't be able to apply in Germany late enough (we will already be on the road three months before our approx. arrival to China)
- we won't fly into China (and the visa agencies in Germany want to have round-trip flight tickets) - we would just fly back from Beijing to Berlin

So, Plan B would be to try to get a visa as soon as we arrive in Ulaanbaatar, Mongolia. As I read before, it could be possible although I see some problems:

- if we really need a flight reservation, maybe there aren't enough free flights from Ulaanbaatar to Beijing on such a short notice
- the time factor: we will probably just have 3 weeks left in Mongolia (30days visa) when arriving in Ulaanbaatar
- letter of invitation - no idea where to get it in the middle of Mongolia

What do you think, should we go for it and try to get a visa for China in UB or should we skip China this time?
