best ways to cook lion's head

hi!
one of the best dishes I tasted in China so far is Lion's Head Meatballs,,, i was surprised to find so many textures and tastes in the same recipe... (it was a yunnanese/kunmingnese version)

I would like to know how to cook it,
but I know there is a lot of ways (like in Spain , we also have our version, "albongigas", lol)...

Which way do you think is the best?
do you know some good link (in english please... :P ) where someone teaches how to cook?

i find a link about how to cook this dish in English.it is a jiangsunese version.i hope it could help,even though the translation is not perfect.
