Vegan In Russia and mongolia

I am taking a trip to siberia, china and mongolia.
If anyone have tips about food and accomodation - I would really like it!

I once read that Buddhist restaurants are always a good place for vegan food. I once read an Austrian vegan travel report (in German) on China saying they found a meat replacement in a vegan Buddhist restaurant made from a mushroom called "monkey head mushroom".
